Megan Fairley's Must Have Christmas Cheesecake Recipe

Thank you so much for your amazing support with the start up of Megan Fairley, and of course Notion Fashion. It's been a tough three years and some times it felt lonely building a business and being bullied along the way. Behind the scenes of social media it can be a very different world, I do how ever believe that everything happens for a reason and there are greater things to come. We will only continue to grow with the nasty stuff that flies my way, so watch this space. If people feel threatened by our creativity that's their problem not mine and I will always hustle with a heart.

My Christmas day is spend hanging with my partners family, and I always get asked to make a Cheesecake, yes this Chocolate Queen is a Cheesecake Queen as well. You don't work inside a Chocolate Factory for 17 years with not being able to bake. Gosh, how do you think us Ladies got our machines fixed so quickly!! We had to do something to lure the engineers to our machines first, and baking is the perfect magnet!! They will so love me writing this!! So here's my precise cheese cake recipe!! This is the basic recipe but feel free to adapt and send tag me a picture, love to see!!! @meganfairley_chocolatequeen
White Chocolate & Raspberry Cheesecake
1 1/4 cups of shortbread biscuits crushed
75g butter melted
2 x 250g cream cheese - soft
2 teaspoons gelatine dissolved in 1/4 cup of boiling water, cooled.
200g white chocolate - Pick the New Zealand Made!!!
1 cup of cream, lightly whipped
1/2 cup fresh or frozen raspberries
Combine biscuit, butter and press into greased spring pan. Beat cream cheese, sugar until smooth, add gelatine then fold in chocolate and cream.
Pour filling into pan, refrigerate for 3 hours or until set. I make mine the night before and then fancy up the top. Garnish with raspberries and dust with icing sugar.
Done.
