Megan Fairley's White Chocolate & Raspberry Cheesecake

Christmas is just around the corner, so we have wiped together some gorgeous Christmas recipes to make your Christmas Day stress free & fabulous. Our cheesecake recipe was discovered back in my old Cadbury days and became an absolute winner amongst family and friends and is so super easy to make.
Christmas White Chocolate & Raspberry Cheesecake
1 ¼ cup shortbread biscuits crushed
75g butter
2 x 250g cream cheese
¾ cup sugar
2 teaspoons of gelatine dissolved in ¼ cup boiling water, cooled.
200g white Toblerone melted
1 cup cream, lightly whipped
½ cup fresh raspberries or strawberries
Combine biscuits, butter and press into a greased spring pan.
Beat cream cheese, sugar until smooth, add gelatine then fold in Toblerone chocolate and cream.
Pour filling into pan, refrigerator for 3 hours or until set.
Garnish with raspberries and dust with icing sugar, and if you haven’t got raspberries swap out for strawberries or your favourite berries and chocolate sweets.
Our cheesecake is best made the day before, and takes about 45 minutes to make.
The Most Delicious Christmas Ham Glaze
1 cup runny honey
¼ orange juice
1 cup brown sugar
2 tsp Dijon mustard
Prepare ham, remove rind and score the ham, add cloves if desired, place wrapped in tin foil in a large oven dish. Don’t panic if the ham bone sticks out the end Simple just wrap some tin foil around the bone.
Mix together glaze and brush ⅕ of the mixture over the prepared ham, place ham in the oven and bake on low 140 - 160 degrees for around an hour. Glazing the ham every 15 - 20 minutes until golden brown and delicious.
Your ham will last days, so make sure you have a ham bag on stand by, soak your ham bag in apple cider vinegar, before placing the ham inside the bag then pop it in the fridge.
